Aunt Jan's Everyday Mayonnaise

If you're looking for a healthy alternative to mayo, look no further. This low-iodine version is an excellent addition to your pantry. (Contributed by Christina B. of Maryland.)

Why settle for store-bought mayonnaise when you can make a healthier, tastier option from the comfort of home? Once you try this masterful mayo recipe, you'll never look back.


In Christina's own words:

"This was my Aunt Jan's recipe that she used for years with her kids. She would make a batch and put it in a store-bought mayonnaise jar and her kids never knew the difference."

Ingredients:

  • 2 egg whites (or 1 egg if off the low-iodine diet)

  • 1 teaspoon dried mustard

  • 1 teaspoon salt

  • 1 teaspoon sugar (optional)

  • 1/4 cup oil

  • 3 tablespoons lemon juice

  • Additional 1/2 cup oil

  • Shake of curry, turmeric, or paprika if desired to add additional flavor


Directions:

  1. Place egg whites, mustard, salt, sugar, and oil in a blender; cover and mix

  2. Keep blender running; remove cap

  3. Add lemon juice slowly

  4. Next, add 1/2 cup of oil very slowly (one tablespoon at a time) and stop when mayo is at desired consistency (should be thick)
