Of all of the recipes shared from ThyCa's Low-Iodine Cookbook, Stephanie's banana nut bread has ranked #1 on ThyCa's Pinterest page for some time now. No doubt this fall treat will become an all-time favorite among your family and friends as well.
Ingredients:
2 egg whites
1/2 cup canola oil
3/4 cup sugar
1 teaspoon vanilla
1/4 cup applesauce
1 1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup chopped walnuts
2 large ripe bananas, mashed
Directions:
Heat oven to 375 degrees F
Mix eggs, oil, sugar, vanilla, and applesauce with a spoon
Stir in dry ingredients
Add bananas and chopped walnuts
Stir until well mixed
Bake in loaf pan at 375 degrees F until done (50-60 minutes)
