Fruit in the batter? Find out the secret ingredient that takes these waffles to another level.
Ingredients:
3-4 egg whites
2 cups flour
1-½ cups water
¼ cup apple sauce
¼ cup coconut oil or vegetable oil
1 tablespoon granulated sugar
4 teaspoons baking powder
¼ teaspoon non-iodized/non-sea salt
½ teaspoon vanilla
½ cup maple syrup
Instructions:
Preheat your Belgian waffle iron.
Blend the egg whites in a blender (or with a mixer) until fluffy. Add all the other ingredients and mix them together for about 20–30 seconds, until you form a lumpy batter. Let the batter rest for 1 minute. (Note: Do not over mix, as it will result in very firm waffles.)
Heat the maple syrup in the microwave for 20 seconds. Place it on the table.
Add ⅓ cup of batter to your waffle iron. Follow the directions for your waffle iron. One waffle usually takes 3-4 minutes to cook to a golden brown.
Tip: Another way to make the perfect waffle is to watch the steam escaping from the sides. If you notice the steam has decreased or nearly stopped rising from the waffle iron, the waffle is ready.
Serve and enjoy! Makes 6–8 waffles.
