“Breaded Chicken Cutlets

No need to go out for fast food when you have this “breaded” chicken cutlet recipe.

Quickly cook this for lunch or dinner and pair with sides as you see fit!


Ingredients:

  • Two 5 to 6-oz boneless, skinless chicken breasts

  • 1½ cups flour

  • Non-iodized/non-sea salt and pepper to taste

  • 5 large egg whites

  • 1½ cups unsalted matzo meal

  • 1 tablespoon Italian herb seasoning (salt-free)

  • 3 tablespoons olive oil (add more as needed)

Instructions:

  1. Flatten chicken breasts to about ¼-inch thickness and cut into 1½-inch strips.

  2. Set up 3 bowls as follows:

    1. Bowl 1: Flour mixed with salt and pepper to taste

    2. Bowl 2: Egg whites

    3. Bowl 3: Unsalted matzo meal mixed with Italian herb seasoning

  3. Roll chicken strips in flour mixture then quickly submerge them in the egg whites.

  4. Next, roll them in the matzo-meal mixture.

  5. Coat the bottom of a frying pan with olive oil.

  6. On medium-high heat, fry the cutlets (covered) for approximately 3 minutes on each side.

  7. The breading will become crisp and golden.

  8. Add oil as needed and fry the chicken in 2 batches. Serve warm or cold with fresh lemon juice.
