Cool Cucumber Pasta

Who knew pasta could be so refreshing? Cool off with this different spin on pasta salad (Contributed by Shannon R. of South Carolina)

The cooling power of cucumbers makes this a great warm-weather dish. Make it your own way with other refreshing ingredients like basil, red onions, or low-iodine feta.


Ingredients (primary):

  • 8 ounces pasta (with no eggs)

  • 1 tablespoon vegetable oil

  • 2 medium cucumbers, thinly sliced—do not peel

  • 1 medium onion, sliced thin

Ingredients (dressing):

  • 1 1/2 cups sugar

  • 1 cup water

  • 3/4 cup vinegar

  • 1 tablespoon mustard (use dry and add water)

  • 1 teaspoon non-iodized salt

  • 1 teaspoon pepper

  • 1/2 teaspoon garlic salt

Directions:

  1. Cook pasta, drain, and rinse in cold water.

  2. Put in a large bowl and add oil, then cucumbers and onions, and stir.

  3. Mix the dressing and pour it over salad and toss.

  4. Cover and chill several hours, or eat the next day. Enjoy!

  5. Makes 4-6 servings
