Easy Orange Chicken

If you're looking for a quick, sweet, and savory weeknight meal that is sure to be a crowd pleaser, this easy orange chicken is the way to go. (Contributed by a friend of ThyCa.)

This easy orange chicken recipe offers a tasty, healthy option when you're short on time to make dinner for the family. Simply pair it with pasta or rice and a vegetable of your choice for a complete and wholesome meal.


Ingredients:

  • 2 boneless, skinless chicken breasts, halved (or 4 breast filets or 4-6 thighs)

  • 1 medium onion, chopped

  • 1 cup orange juice

  • 1 tablespoon cornstarch

  • 1 teaspoon dried thyme (optional)

  • Non-iodized salt (to taste)

  • Pepper (to taste)


Directions:

  1. Preheat oven to 325 degrees F

  2. Oil/grease a baking pan and add chicken and onion

  3. In a separate bowl, mix cornstarch and orange juice

  4. Add thyme to bowl

  5. Pour mixture onto chicken

  6. Bake in oven until tender (~40 minutes)
