Fresh, Tangy Chicken Fajita Bowls

This tangy southwestern classic is an excellent addition to your weeknight recipe rotation. (Contributed by Margy.)

Margy's fajita bowls are packed with savory flavor. Wholesome ingredients and simple spices make this dish an easy, memorable meal that is sure to satisfy.


Ingredients (marinade):

  • 1/4 cup vegetable oil

  • 1/3 cup red wine vinegar

  • 1/3 cup lemon or lime juice

  • 1 teaspoon brown sugar

  • 1 teaspoon dried oregano

  • 1 clove crushed garlic

  • 1/4 cup minced onion

  • 1/2 teaspoon salt

Ingredients (additional):

  • 4 boneless, skinless chicken breasts

  • 1 onion

  • 2 red peppers

  • 1 avocado

  • 2 tomatoes (large)

  • Rice (cooked)

  • Cilantro

Directions:

  1. Mix ingredients for marinade; set aside

  2. Cut chicken into strips

  3. Add chicken to marinade and refrigerate 4-8 hours

  4. Cook marinated chicken over medium-high heat until cooked through and slightly browned

  5. Slice the peppers and chop the onion

  6. Sautee peppers and onion in oil, separately from the chicken, until tender (~3-5 minutes)

  7. Chop the avocado, tomatoes, and cilantro

  8. Mix the chicken, rice, peppers and onions, tomatoes, and avocado

  9. Serve and top with the chopped cilantro
