Margy's fajita bowls are packed with savory flavor. Wholesome ingredients and simple spices make this dish an easy, memorable meal that is sure to satisfy.
Ingredients (marinade):
1/4 cup vegetable oil
1/3 cup red wine vinegar
1/3 cup lemon or lime juice
1 teaspoon brown sugar
1 teaspoon dried oregano
1 clove crushed garlic
1/4 cup minced onion
1/2 teaspoon salt
Ingredients (additional):
4 boneless, skinless chicken breasts
1 onion
2 red peppers
1 avocado
2 tomatoes (large)
Rice (cooked)
Cilantro
Directions:
Mix ingredients for marinade; set aside
Cut chicken into strips
Add chicken to marinade and refrigerate 4-8 hours
Cook marinated chicken over medium-high heat until cooked through and slightly browned
Slice the peppers and chop the onion
Sautee peppers and onion in oil, separately from the chicken, until tender (~3-5 minutes)
Chop the avocado, tomatoes, and cilantro
Mix the chicken, rice, peppers and onions, tomatoes, and avocado
Serve and top with the chopped cilantro
