Nothing tastes more like summer than grilled peaches.

(Contributed by Light of Life Foundation)

Do your summertime meals right by adding this sweet treat to salads or as a dessert.

Ingredients (4 servings):

  • 2 tbsp walnut or almond oil

  • ½ tsp ground cinnamon

  • ¼ tsp freshly grated nutmeg

  • Cooking oil

  • 3 tbsp lemon juice

  • 4 peaches

  • 1-2 tbsp brown sugar (if serving as a dessert)

Instructions:

In heavy bottom saucepan:

  • Heat oil on medium heat.

  • Add ground cinnamon and freshly grated nutmeg; cook gently until hot.

  • If serving as dessert, add 1-2 tbsp brown sugar to taste or according to sweetness of fruit.

  • Turn off heat.

  • Add fresh lemon juice. Stir well to blend.

  • Wash and slice peaches in half; remove stones.

  • Brush the 8 peach halves with lemon mixture and place cut side down on hot grill. Brush skin with lemon mixture.

  • After grill marks have formed on peach halves, flip over to skin side and close grill lid.

  • Continue to grill for 3-5 minutes until peaches are heated through and juices have accumulated in the center of peach halves.

  • Carefully transfer halves to serving dish so that the juices do not spill out. Pour any remaining butter sauce over the peaches and cover with lid or plastic wrap for 10 minutes.
