Hot Citrus Chicken

Savory, sweet, and tangy, this chicken dish hits all the right notes.

Great for a midweek meal, this flavorful feast is ready in minutes. Pro-tip: read through all the directions first. There are a few moments of downtime you can use for multitasking the rest of your dish.


Ingredients:

  • 2 teaspoons unsalted poultry seasoning

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 1/4 teaspoon ground allspice

  • 1/4 teaspoon ground red pepper

  • 1/4 teaspoon black pepper

  • 1 pound chicken breast, cubed

  • 1 Tablespoon olive oil

  • 1/4 cup water

  • 1/4 cup white wine (or extra water or homemade chicken broth)

  • 1 Tablespoon lemon juice

  • 1/8 teaspoon salt

  • 1 Tablespoon orange marmalade


Directions:

  1. Combine first 7 ingredients in a small bowl, stir well.

  2. Rub chicken with spice mixture (just toss it in the bowl), let sit 5 minutes.

  3. Heat oil in a skillet, add chicken, and lightly brown (just a minute or so).

  4. Add water and wine.

  5. Cover, reduce heat, and simmer 6 minutes or until chicken is cooked through.

  6. Remove chicken.

  7. Add lemon juice, and 1/8 teaspoon salt to skillet, bring to boil, and simmer until reduced about 4 minutes.

  8. Stir in marmalade and add chicken back.

  9. Serve over rice.
