Nina’s Chocolate Cake

One bowl and a few simple ingredients make for a quick and delicious chocolate cake recipe (Contributed by ThyCa: Thyroid Cancer Survivors’ Association, Inc.)

You don’t need a chef’s kitchen to make this decadent treat that everyone will love until the last bite.


Ingredients:

  • 2 cups water

  • ½ cup vegetable oil

  • 1 tbsp white vinegar

  • 2 tsp vanilla extract

  • 3 cups all-purpose flour

  • 1 ½ cup sugar

  • ½ cup unsweetened cocoa powder

  • 1 ½ tsp baking soda

  • ½ tsp non-iodized/non-sea salt vegetable cooking spray

  • 2 tsp powdered sugar

Directions:

  1. Preheat oven to 350° F.

  2. Combine the first four ingredients in a large bowl.

  3. Combine flour and the next four ingredients in a separate bowl, making sure to stir well.

  4. Add the flour mixture to the water mixture and beat at low speed with an electric mixer until well blended. Then, beat for an additional one minute at high speed.

  5. Pour the batter into a 13”x 9” x 2” baking pan coated with cooking spray and bake for 35 minutes, or until a wooden pick inserted in the center comes out clean.

  6. Cool completely in the pan on a wire rack.

  7. Sprinkle powdered sugar over top of cake.
