We can’t get enough of these tasty zucchini recipes!

Pair this tasty side with your next dinner to switch up the home menu.
Ingredients (2-3 Servings):
1½ lb zucchini
2 tbsp extra virgin olive oil
¼ cup white wine vinegar
¼ cup sugar
Pinch red pepper flakes
4 garlic cloves, thinly sliced
4 tbsp basil leaves, freshly chopped
4 tbsp parsley leaves, freshly chopped
Instructions:
Wash and dry zucchini.
Cut lengthwise into slices ⅓-inch thick.
Place zucchini slices in a colander; set aside to drain for 2 hours.
In a large saucepan, heat the olive oil over medium heat.
Place drained zucchini slices in pan and cook gently until golden brown on both sides (about 3 minutes per side), being careful not to burn the slices. Set aside.
In another saucepan, bring vinegar and sugar to a boil over high heat. Add a pinch of pepper flakes.
Place zucchini slices flat in a shallow bowl with garlic slices, basil, and parsley scattered throughout.
Pour sweet-and-sour mixture over zucchini slices.
Cover and let marinate for at least 24 hours before serving.
May be served hot or cold.
