Tomato-Basil Pasta Salad

Fresh tomatoes and aromatic basil lift this simple dish to another level

This is one of those no-fuss “any-time” dishes that you can make as a main or as a side. Perfect for people with vegetable and herb gardens!


Ingredients:

  • 3 large ripe tomatoes, coarsely chopped

  • 1/3 cup chopped red onion

  • 1⁄4 cup extra-virgin olive oil

  • 2 Tablespoons red wine vinegar

  • 1 teaspoon minced garlic

  • 1⁄2 teaspoon non-iodized salt

  • 1⁄2 teaspoon black pepper

  • 1⁄4 teaspoon oregano

  • 12 ounces rotini pasta

  • 1 cup fresh basil leaves, cut into thin strips


Directions:

  1. Put tomatoes, onion, olive oil, vinegar, garlic, salt, pepper, and oregano in a large bowl; toss.

  2. Let stand at room temperature at least 30 minutes or until tomatoes release their juices, tossing occasionally.

  3. Cook pasta as package directs. Drain and add to bowl with tomatoes; lightly toss.

  4. Let come to room temperature.

  5. Add basil; toss.

  6. Serve immediately or refrigerate.
